The Original Pancake House chain, founded in suburban Portland, has grown to include an unlikely but popular outpost in Ballard, where the Dutch baby pancake is entrusted to just one man. The 'baby' doesn't go out to customers until the server, alerted by a wireless page, is standing ready to deliver it.
